YB Lifestyle: All You Need is Shoes (and Muffins)

At YellowBox HQ, we're always hungry! What better way to cure the Monday blues than to feed your work family with scrumptious muffins? We started this week off on a good note, and we're going to show you how to do the same with these delicious recipes. The best part about baking around the house? Breaking in some new shoes, of course! We can't get enough of the Tasia Flats in Cheetah.

Recipe: Baked French Toast Muffins

Yield: 12 muffins
Prep Time: 15 minutes (Plus 2 hours to overnight in fridge)
Cook Time: 25 minutes

Ingredients:

1 loaf French bread, cut or torn into 1/2 inch cubes (about 12 cups of bread)

2 1/2 cups milk

6 large eggs

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 teaspoon ground cinnamon


For the Cinnamon Streusel Topping:

1/4 cup cold butter

1/4 cup light brown sugar

1/4 cup all-purpose Gold Medal flour

1/8 teaspoon ground cinnamon

Pinch of salt


Butter and Maple Syrup, for serving, optional

Directions:

1. In a medium bowl, whisk together the milk, eggs, sugar, vanilla, and cinnamon.


2. Grease a 12 cup muffin tin. Add about 1 cup of bread cubes to each muffin cup. Carefully pour egg and milk mixture evenly over each muffin tin. You may need to press down on the bread cubes after you pour a little mixture and then pour more. Pour slowly or you will have a mess. Cover the muffins with plastic wrap and refrigerate for 2 hours or up to overnight.


3. When ready to bake, preheat the oven to 350 degrees F. To make the cinnamon streusel, in a small bowl, combine butter, brown sugar, flour, cinnamon, and salt. Mix together with your hands, until you have a crumbly mixture. Remove the muffins from the refrigerator and sprinkle the muffins evenly with the streusel topping.


4. Bake for 25 minutes or until tops are golden brown. Let muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup, if desired.

Ingredients:
1 lb. hot ground pork sausage
1 tsp onion powder
3 cups all-purpose baking mix
1 (10.75 oz) can condensed fiesta nacho cheese soup
2 cups shredded Cheddar cheese
3/4 cup buttermilk (water or milk will work too)

Directions:
1. Cook sausage and onion in a large skillet over medium to med-high heat, stirring until it
crumbles and no longer pink. Drain and cool.
2. Preheat oven to 375. Combine sausage, baking mix, and shredded cheese in a large bowl.
Make a well in the center of the mixture.
3. Stir together the soup and buttermilk; add to sausage mixture, stirring just
until dry ingredients are moistened.
4. Spoon until lightly greased mini muffin tins, filling to tops of cups.
Bake for 15-18 minutes or until lightly browned.
